Cauliflower Frittata


2 - 3 Flowerettes of Cauliflower
Salt and Pepper to taste
2 eggs
1/2 cup Peccorino Romano Cheese
1 cup seasoned breadcrumbs
1 Tablespoon Basil
1 Tablespoon Parsley
2 -3 Tablespoons cooking oil

Steam cauliflower with a little salt until fork tender, drain and let cool.
In one bowl beat eggs with a little water.
Smash cauliflower with a fork and add to egg mixture, then add all dry ingredients.
Heat oil in a frying pan and fry mixture on both sides until egg is cooked.

Every time that Nanni used to make her breaded cauliflower, she always would leave aside a couple of flowers from the cauliflower to make a fritatta. It's really good!
