4 pieces boneless, skinless chicken breasts
fresh broccoli spears
1/3 cup crushed croutons
2 Tbl. melted margarine
4 oz. grated cheddar cheese
Sauce:
1 cup mayonnaise
1 can Cream Chicken soup
1/2 tsp. Curry powder
Place broccoli on bottom of pan.
Par-boil chicken in boiling, salted water for 10 min. or less.
Arrange chicken on top of broccoli, then spoon sauce on top of chicken.
Mix melted butter with croutons and sprinkle on top of sauce.
Top with cheddar cheese and bake for 1/2 hr. at 350o.
Serve with Minute Rice that is made with broth from cooking the chicken rather than plain water.
Add mushrooms to the rice or chicken as an alternative.
