Garden Fresh Marinara Sauce



Makes about 3 cups
2 large garlic cloves, lightly smashed
1/4 cup olive oil
2 pounds ripe garden tomatoes or 1 - 28oz. can crushed tomatoes
Salt to taste
8 to 10 fresh basil leaves
In a medium sauce pot, cook garlic in olive oil over medium heat, pressing garlic with the back of a spoon. Sautee until golden, about 4 minutes.
Add tomatoes. If I'm using fresh tomatoes from the garden, i will puree them in a food processor along with the fresh basil leaves. Bring the mixture to a simmer and cook for at least 15-20 minutes. If sauce is too watery, add a can of tomato paste to thicken.
Serve hot over pasta.
