1 pound lean ground beef
1 small onion (chopped finely)
1 egg
1/4 cup grated Romano cheese
1/4 cup seasoned Italian bread crumbs
Dash salt and pepper
2 tablespoons dried parsley flakes
- In a bowl, mix all ingredients by hand until a uniform consistency. If mixture is dry or crumbly, add 1 tablespoon of water.
- Roll meatballs by hand (about the size of a golf ball).
- Fry in skillet on medium heat. Press down lightly with spatula to make sure inside cooks.
- Eat fresh out of the skillet or put on top of your favorite pasta dish.

I loved eating Nanni's meatballs when she made them right out the skillet! I could have eaten the whole batch but had to save some for the rest of the family :)
