Makes 4 servings
2 tablespoons minced fresh sage or 2 teaspoons dried
4 teaspoons extra virgin olive oil
1 tablespoon dry white wine
1 tablespoon white-wine vinegar
2 garlic cloves, minced
1/4 teaspoon salt
Fresh ground pepper, to taste
1 16oz. can cannellini beans, rinsed and drained

In a large bowl, whisk the sage, oil, wine, vinegar, garlic, salt, and pepper. Add the beans; toss to coat. Let stand, covered, until the flavors are blended, 1-2 hours.
